During my visit to Hokkaido, I had the incredible opportunity to meet the owner of a renowned factory specializing in grilled pork rice sauce, named Sorachi. This journey took me flying from Bangkok to Hokkaido, a city known for its enchanting snowfall. The factory has been producing its famous sauce for over 60 years, and it was a delight to savor the flavors and traditions that have been passed down through generations. Additionally, I was fortunate enough to experience a meal at a restaurant recommended by the factory owner. Not only did I get to taste the delectable grilled pork rice, but I also took on the role of a staff member, working alongside a team that radiated enthusiasm and joy as they served customers enjoying their meals. It amazed me to witness that everyone at the restaurant finished their dishes without leaving a single grain of rice behind. This experience sparked an inspiration within me to blend the authentic flavors and warm service—hallmarks of the Land of Smiles—with a commitment to maintaining the essence of delicious cuisine. My vision is to create a restaurant that not only preserves the original flavors and exceptional service but also maintains cleanliness at all times.
